<p>The invention relates to an automated ham-processing method, which is performed prior to curing in a drying chamber, and to a ham processing installation. The inventive method comprises a series of steps consisting in preparing the piece of meat or ham prior to curing. The invention is characterised in that it comprises the following steps consisting in: bleeding the piece of meat, measuring pH and temperature, weighing same and taking a height measurement, injecting salt, performing a safety weighing operation, injecting salt in order to correct defects, and labelling the meat. The invention also relates to a complementary ham-processing installation which is used to perform the aforementioned method, comprising: at least one transport surface, a vacuum installation, a pressure installation, a pH- and temperature-measuring device, two weighing systems, a device for measuring the height of the piece of meat, a unit for injecting a saline product, a labelling machine and a system for storing data and performing movements, which is controlled by an automaton and a computer.</p> |
