PROBLEM TO BE SOLVED: To provide a highly safe surfactant with a good performance by making efficient use of wastewater obtained by desalting soy sauce lees, which is a useful resource. SOLUTION: The surfactant represented by formula (1) (wherein R<SP>1</SP>CO is a fatty acid residue; R<SP>2</SP>is an amino acid side chain; M is a hydrogen atom, a metal atom or ammonium; and n is 1-100) is obtained by acylating a mixture which contains amino acids and peptides derived from soy sauce.
