<P>PROBLEM TO BE SOLVED: To provide a sugar heated object having action of aging prevention of starch and suppressing protein denaturation, and improving quality such as flavor and palate feeling of food, and to provide a sugar heated object-containing food added with the sugar heated object. <P>SOLUTION: This sugar heated object is obtained by heating fruit sugar under a temperature of 100-200°C so as to bring an absorbance in 5 wt.% aqueous solution of 480 nm to 0.1-1.0. <P>COPYRIGHT: (C)2008,JPO&INPIT |
