摘要 The invention relates to food and chemical industry and is used for control of concentration of dry dissoluble substances in transparent solutions, in particular for control of quality of vegetable juices. Optical-acoustic method for determination of concentration of dry dissoluble substances in transparent solutions includes determination of wavelength of ultrasonic wave by measured deflection of diffraction maxima of monochromatic light on diffraction grid formed in solution at propagation of ultrasonic wave in it, and by length of that wave one determines concentration of dry dissoluble substances in transparent solutions. Technical result is in determination of concentration of dry dissoluble substances in transparent solution by measured length of ultrasonic wave in it.
