PROBLEM TO BE SOLVED: To provide a method for efficiently forming a saccharified liquid and ethanol, with which essential oils and hydrophilic components that are contained in a lignocellulose resource to make it flow out by making the cellulose contained in the lignocellulose resource, come into more contact with enzymes. SOLUTION: An essential oil and a hydrophilic component having a risk of inhibiting cellulose saccharification are made to flow out from a lignocellulose resource by steam distillation. In grinding, since the crystallinity of cellulose is reduced, the network structure of a woody component is broken by the grinding of the lignocellulose resource, a part of microfibril is exposed and crystallinity of cellulose is broken. Accordingly, enzymatic saccharification reaction of cellulose is promoted, and a saccharified liquid is formed more efficiently.
