A preparation method of a salted brown croaker product using the salt of deep sea water is provided to keep the quality of brown croakers cultured in large quantities by using the cleanness and active-oxygen removal property of deep sea water. A preparation method of a salted brown croaker product using the salt of deep sea water comprises the steps of: (a) quick-freezing cultured brown croakers with the gills and guts removed at -50~-100°C, wherein the brown croakers are obtained from the South Sea; (b) preserving the quick-frozen brown croakers with 10~30wt% of the salt of deep sea water at 10~30°C for 5~20hr, wherein the deep sea water is collected at 200~1000m below the surface sea water of the East Sea at a latitude of 37 degree and a longitude of 130 degrees; (c) washing the salted brown croakers with clean water, and drying them at 10~50°C for 10~40min; and (d) storing the dried brown croakers at 3~10°C. |
