PROBLEM TO BE SOLVED: To provide an apparatus for deboning bony chop, such as arm portions or thigh portions of a livestock carcass for meat, which automates the conventionally manually conducted tendon-cutting process for increasing the rate of automation of work, and simplifies the yield of the meat. SOLUTION: This apparatus for automatically deboning of bony chops comprises suspending portions 1 to 3ST and for suspending the bony chops to debone a first bone, and conveyer portions 4 to 6ST, disposed downstream of the suspending portions and used for putting the bony chops for deboning a second bone; cutting tendons in the longitudinal directions of the first bones z, j in a state holding and suspending the exposed neck portion d of the bony chops (1 to 2ST); and then tearing off meats around the first bones to debone the first bones (3ST) in the suspending portions; and exposing the upper side surface of the second bone in the bony chops, in a state with a thin meat portion m1 on a side close to the second bone k turned to the upper side (4ST), cutting tendons along the side face of the second bone (5ST); and then tearing off the second bone to debone the second bone (6ST).
