摘要 The invention comprises hydrogen peroxideconditioned, water dispersible collagen. Waterdispersible collagen may be prepared by treating a collagen-containing material with hydrogen peroxide to condition it, acidifying the conditioned collagen to a pH not above 3.0, and comminuting the acidified, conditioned collagen. The collagen-containing material is conditioned by treatment with a 0.5 to 10.0% solution of hydrogen peroxide. The conditioning may take place at a temperature of approximately 37 DEG C. and may take about 1 to 2 hours. The conditioned collagen may be acidified to a pH of 2.0 to 3.0 e.g. with hydrochloric acid, at a temperature of approximately 37 DEG C. The comminuted collagen may be treated at a pH of up to 4.0 and a temperature of 1 DEG to 60 DEG C. or the comminuted collagen may be maintained at a pH of up to 4.0 and a temperature of 0 DEG to 60 DEG C. for up to 8 hours, e.g. at a pH of 1.0 to 1.5. The collagen-containing material may be skin e.g. pigskin, hide, tendons, or ossein. Food may be coated with a film formed from hydrogen peroxide-conditioned, water-dispersible collagen, and the film may be tanned. Tanning agents are vegetable wattle, chestnut tannins, oak bark, quebracho extract and spruce extracts; sodium dichromate, chromium sulphate, chrome alum, and aluminium sulphate; formaldehlde, sulphonic chromates and phenolic synthetic tars.ALSO:foods, e.g. pieces of meat or sausage, may be coated by dipping in a liquid dispersion of a hydrogen peroxide-conditioned water dispersible collagen. The coating may be tanned using vegetable wattle, chestnut tannins, oak bark, quebracho extract and spruce extracts; sodium dichromate, chromium sulphate, chrome alum and aluminium sulphate; formaldehyde, sulphonic chromates and phenolic synthetic tans. The collagen product may also be used as heat-coagulable food binders. The collagen product is prepared by treating a collagen-containing material with hydrogen peroxide to condition it, acidifying the conditioned collagen to a pH not above 3.0, and comminuting the acidified conditioned collagen. The collagen containing material, e.g. skin, hide, tendons, or ossein, may be conditioned by treatment with a 0.5 to 10.0% solution of hydrogen peroxide. The conditioning may take place at a temperature of approximately 37 DEG C. and may take about 1 to 2 hours. The conditioned collagen may be acidified to a pH of 2.0 to 3.0, e.g. with hydrochloric acid, at approximately 37 DEG C. The comminuted collagen may be treated at a pH of up to 4.0 at a temperature of 1 DEG to 60 DEG C. or the comminuted collagen may be maintained at a pH of up to 4.0, e.g. 1.0 to 1.5, and a temperature of 0 DEG to 60 DEG C. for up to 8 hours.
