摘要 A method for producing condensed skimmed milk with sugar provides for milk pasteurization, cooling, enzymatic hydrolysis under the temperature of 45-47 °С for 4.0-4.5 hours with following inactivation of the enzyme under the temperature of 73-75 °С and holding during 15-17 minutes, addition of sugar syrup and/or milk-sugar syrup, and/or sugar, condensing milk and cooling. The method allows to reduce caloric value of the product with retention of high organoleptic characteristics.
