A cooling method of a metal mold is provided to keep the temperature of the mold proper by discharging overheated water or excessive water, measured by a flute sensor, a temperature sensor, and an electric valve, through a discharge line and heating water in a tank with heater. In a cooling method of a metal mold, a coolant(1) is fed to a coolant tank(5) through a straightener(2), an electric valve(3), and a pipe. The coolant in the coolant tank circulates through molds(30,31) via coolant circulating lines(20,21) by using a pump(9). When water in the coolant tank exceeds a predetermined amount or overheats above a predetermined temperature, excessive water or overheated water is discharged through a discharge line(10) by using a flute sensor(6), a temperature sensor(7), and an electric valve(11). If water in the coolant tank is lower than the predetermined temperature, a heater(8) installed in the coolant tank heats the coolant.
