In a process for preparing ripe plantains the individual fingers of ripe plantain are peeled and the core removed; the core is then cut into pieces of different shapes and forms and then fried for a set time by way of brief immersion into hot vegetable oil, preferably at 190{C, ready to be frozen and packaged for shipment. By transforming ripe plantain into a pre-cooked and frozen food, losses due to over-ripening are prevented. |
