<P>PROBLEM TO BE SOLVED: To provide a method for producing risotto which leaves core in the central part of rice (al dente condition) even cooking after freezing and has excellent palate feeling. <P>SOLUTION: This method for producing the risotto comprises (A) a process of frying raw rice with edible oil and fat, (B) a process of adding bouillon to the fried rice followed by heating in a closed condition, and heating the rice in an opened condition to make half cooked rice, and (C) a process of dispersing the half cooked rice in bouillon containing gelatin and processed starch to add, and holding in a container so as to form a recessed shape in the upper center followed by freezing. <P>COPYRIGHT: (C)2008,JPO&INPIT |
