A data recording/reproducing method and a data reproducing device are provided to obtain the most adequate BER without installing a servo at an image sensor additionally, and to reduce the time for obtaining the most adequate BER by controlling an image obtained when reproducing data by a high-speed software method. A data recording/reproducing method includes a step of obtaining an image from an image sensor(S200); a step of extracting a reproducing image by showing an edge of the reproducing image accurately by giving excessive brightness to the obtained image(S210); a step of performing a space low-frequency filtering operation on the reproducing image to remove comb-type noise(S220); a step of changing the obtained image into a specific image from information about positions of three specific identification areas(S230); a step of computing a critical value which is a standard when changing each pixel of the matrix-changed image into a '0' or '1' bit value(S240); and a step of performing a recovering operation(S250). A data reproducing device comprises a shutter, a beam splitter, a first beam path, a second beam path, and a recording medium. The shutter blocks or passes a beam generated from a light source. The beam splitter splits the beam sent from the shutter, into first and second beams. Hologram data generated by interference between the first and second beams is recorded in the recording medium.
