In making a dehydrated mashed potato product of high bulk density and readily reconstitutable with boiling water, moist cooked potato is mixed with dehydrated cooked mashed potato flakes to produce a mixture containing 30-50% of water, the mixture is allowed to stand for a period, e.g. 30 minutes, to permit moisture equilibration between the wet and the dry particles, and the mixture is then dried, e.g. to 6% moisture. A fatty acid monoglyceride, e.g. glyceryl mono-palmitate, -laurate or -stearate, is preferably included in the mixture; hydrogenated cottonseed oil may also be added. The raw potatoes from which the moist cooked potato is prepared may be pre-cooked for 10-60 minutes at 140-180 DEG F. and washed to remove surface starch. The flake potato is made by supplying cooked mashed potato on to an internally heated drum or into the nip of a double drum drier and detaching the dried layer with a doctor knife.
