Disclosed is a method for producing a composition or food containing ?-aminobutyric acid by converting glutamic acid into ?-aminobutyric acid with high efficiency. The method comprises mixing a non-mature bean or a cell wall disruption product of a hull of the non-mature bean with glutamic acid or a composition containing glutamic acid and maintaining the mixture for a predetermined time, thereby producing ?-aminobutyric acid or a composition containing ?-aminobutyric acid. In the method, it is preferred that the pH value of the mixture be adjusted to a specified value.
