<P>PROBLEM TO BE SOLVED: To provide soybean monoscus-containing fermented soybean paste having high safety, applicable to health food and popular food, containing monakolin K excellent in hypocholesterolemic activity, rich in flavor and having good color, by actually utilizing soybean monoscus obtained through solid culture using strains belonging to genus monoscus for fermented soybean paste while specifying soybean as malt-making raw material which has not been suggested. <P>SOLUTION: The soybean monoscus-containing fermented soybean paste comprises fermented soybean paste utilizing monakolin K-containing soybean monoscus and rice malt as raw material and containing ≥12 mg of the monakolin K based on 100 g of the soybean paste, wherein the soybean monoscus subjected to heat treatment before preparation of ingredients is utilized as raw material. <P>COPYRIGHT: (C)2008,JPO&INPIT |
