A fermentation system is provided to enhance fermentation of boiled beans contained in fermentation boxes while allowing the finally fermented product to be dried directly in a fermentation chamber. A fermentation system comprises: a fermentation section(110) having a fermentation chamber(111), a door equipped with a window, a plurality of supported pieces(112) for stacking fermentation boxes(114), and a circulation hole(113) communicating with the fermentation chamber; a temperature measuring section(120) received in the fermentation box for measuring the temperature in the fermentation chamber and having a temperature sensor(121) for transmitting the temperature measurement; a heat generating section(130) having an upper heat emitting unit(131), a plurality of lateral heat emitting units(132), a lower heat emitting unit(135), and a heat insulation member(133) disposed outside of the lateral heat emitting units to prevent heat conduction to the exterior; a humidifying section(140) having a heating container(141) and a heater(142) for generating steam to maintain the humidity in the fermentation chamber; a drying section(150) formed in the vicinity of the upper heat emitting unit for introducing the heat of the upper heat emitting unit into the fermentation chamber for drying the fermented product; and a control section(160) for maintaining a constant temperature in the fermentation chamber, which includes an operation panel(161) having temperature display window(162) for displaying the temperature measurement transmitted from the temperature sensor and a switch(164) for setting the temperature of the lateral heat emitting units. |
