摘要 A method of manufacturing a hot air-dried food block is provided to be applied to various dry foods of vegetables, mushroom and other agricultural and fishery products and be used to instant dry food and instant noodles(Ramyeon). A method of manufacturing a hot air-dried food block comprises the steps of preparing a hot air-dried material, preparing a solvent for block and preparing a block. The hot air-dried material is prepared by mixing raw materials with 1 to 3% by weight of salt and soaking at room temperature for 20 to 30min; mixing 3 to 7% by weight of sugar and soaking at room temperature for 30 to 90min; drying with hot air of 60 to 80deg.C for 1 to 2hr; and drying with hot air of 50 to 60deg.C for 4 to 7hr. The solvent for block is prepared by mixing 75 to 78% by weight of purified water, 10 to 15% by weight of salt, 7 to 10% by weight of lactose and 3 to 5% by weight of glucose; adding 1 to 2% by weight of fat components; and heating at 40 to 45deg.C in a steam-jacketed kettle. The block is prepared by soaking 50 to 60% by weight of the hot air-dried raw material in 40 to 50% by weight of the solvent for block; pressing into a predetermined form; drying with hot air of 60 to 70deg.C for 1 to 1.5hr; and drying with hot air of 40 to 45deg.C for 1 to 1.5hr.
