<P>PROBLEM TO BE SOLVED: To solve problems that much of dietary fiber in the starch can not endure starch processing operation including chemical, enzymatic and physical processing, in particular, severe condition of extrusion, and producing products containing remarkably reduced dietary fiber. <P>SOLUTION: The present invention relates to a starch composition with high total dietary fiber (TDF) that retains its TDF upon processing. In particular, over 50% of such fiber is retained upon extrusion processing.
