<P>PROBLEM TO BE SOLVED: To provide a method for producing retort white rice gruel produced by an easy production method, and in spite of being subjected to retort treatment, excellent in grain remaining of rice grains like hand-made rice gruel boiled in a pan. <P>SOLUTION: This method for producing the retort white rice gruel comprises filling rice and clean water in a heat-resisting container followed by subjecting to retort treatment. In more details, the method comprises using for the rice, wash-free rice, and for the clean water, hot water at ≥80°C, filling and sealing wash-free rice with 13-20% moisture and the hot water in a heat-resisting container, cooling the sealed product as it is, and subjecting the product to retort treatment. (As for the wash-free rice, wash-free rice produced by a rice bran removing method with a polishing brush or wash-free rice produced by a rice bran removing method in a condition of adding exceeding 10% of clean water to polished rice is excluded). <P>COPYRIGHT: (C)2007,JPO&INPIT |
