PROBLEM TO BE SOLVED: To provide a production method for obtaining endotoxin-reduced gelatin having an endotoxin content reduced to an amount capable of being used in bodies without largely changing the molecular structure of the gelatin. SOLUTION: This method for producing endotoxin-reduced gelatin obtained from collagen originated from fishes or shellfishes comprises a gelatin-producing process for thermally changing collagen into gelatin, and an endotoxin-inactivating process for heating the gelatin in an environment in a pH range of 5.0 to 9.0 to inactivate the endotoxin in the gelatin, thus obtaining the endotoxin-reduced gelatin.
