A process for the removal of the peel of potatoes or other tubers, bulbs, roots, fruit, or similar vegetables, which peel has been softened by treatment with lye or steam, comprises mixing the vegetable products, pre-treated with lye or steam with dried peel residues having a Puffe granule size index number d<SP>1</SP> of less than 4.0mm and a Puffe granule size uniformity co-efficient of 1.0 to 4.0, thereafter separating the vegetables products from the peel residues by screening, the quantity of dried peel residues added being such that the material passed by the screening sieve consists to the extent of at least 65 per cent by weight of added dried peel residues. The index number and the uniformity co-efficient are defined in the body of the speon. The vegetables may be washed prior to their immersion in a lye peeler (16-20 per cent soda), or transferred to a steam chamber where they are subjected to high pressure steam, before being transferred to the mixers. After the peel has been separated it may be dried in a rotary drum and the majority re-used while some may be burned to provide heat for the drying of further peel or, if the vegetables have been steam treated, may be used as fodder. The peeled potatoes may be finally washed with water in order to be completely cleaned. |
