<P>PROBLEM TO BE SOLVED: To provide a β-amyrin derivative having a weak side effect and an excellent inhibiting action on production of an inflammatory cytokine, and a food product preparation, a cosmetic, and an anti-inflammatory agent comprising the same. <P>SOLUTION: The β-amyrin derivative having a weak side effect and an excellent inhibiting action on production of an inflammatory cytokine is a derivative formed by bonding β-amyrin to a compound selected from among stearic acid, palmitic acid, eicosapentaenoic acid, docosahexaenoic acid, docosapentaenoic acid, octanoic acid, decanoic acid, and γ-linolenic acid, and is obtained by admixing crushed flower of chrysanthemum, lipase for transesterification, and one of the above listed compounds, heating the admixture, and extracting it therefrom by soybean oil containing an essence of persimmon leaves. The food product preparation or the cosmetics comprises the β-amyrin derivative, astaxanthin, and soybean oil containing an essence of persimmon leaves.
