A super high water pressure sterilizer and a method of sterilizing agricultural and fishery products are provided, which hardly cause shape change or deterioration of raw material and improves working efficiency. The super high water pressure sterilizer(100) is placed within a concrete room(200) and comprises: a water supply apparatus(4) to supply water to a main pressure applying apparatus(1) through a water supply line(A) and to supply water to a high pressure generator(2,3) through a water supply line(B); the high pressure generator to supply super high pressure water to the main pressure applying apparatus through a water supply line(C); an air supply apparatus(5) to generate air and to supply the air to the main pressure applying apparatus through an air supply line(D,E); a high pressure chamber; and an operating screen(7). The raw material for food is sterilized using the super high water pressure sterilizer by the steps of: putting the raw material into the high pressure chamber of the main pressure applying apparatus; supplying supper high pressure water to the high pressure chamber; and sterilizing the raw material with the supper high pressure water of 1,000 to 6,000bars for 30 to 600sec.
