A structure of a variable valve is provided to automatically open and close a pipe passage according to the temperature of the pipe passage by closing the pipe passage at a low temperature and opening the pipe passage at a high temperature. A structure of a variable valve includes a pipe passage(11), an upper structure(12), a lower structure(14), and a vermiculite plate mat(13). A fluid flows through the pipe passage. The upper structure is installed on one side of the pipe passage so as to be moved upward and downward. The lower structure is installed at a lower portion of the upper structure and is restricted by the pipe passage. The vermiculite plate mat is installed between the upper structure and the lower structure and is expanded and contracted according to the temperature of the pipe passage.
