[PROBLEMS] To provide emulsified particles which are constituted of an antioxidant having a surface tension lowering effect or a derivative thereof, a liquid matrix, a fat-soluble substance, and a solvent and which are excellent in stability and safety; uses of the same; and a process for production thereof. [MEANS FOR SOLVING PROBLEMS] Emulsified particles having excellent stability and high safety can be produced in water or a liquid solvent from a raw material consisting of glycerol and/or at least one simple liquid matrix or a complex thereof, at least one simple antioxidant having a surface tension lowering effect or a complex thereof which is dissolved or dispersed therein, and at least one simple fat-soluble substance or a complex thereof. The invention also provides uses of the particles and a process for production thereof.
