PURPOSE: A method of making a lactic acid bacteria fermented product by inoculating Bifidobacterium breve into a mixture of 24 cereals, ascorbic acid and water and then fermenting or fermenting after germinating the cereals is provided. The product is effective in maintaining intestinal flora populations and digestibility and can be used as a health food material, uncooked food products or mixed cereal powder products. CONSTITUTION: Mixed cereals are soaked in water for 4 to 6hr, sterilized, inoculated with 1 to 40% by weight of Bifidobacterium breve and then fermented at 37 to 27.5deg.C for 2 to 48hr. Before the sterilization, 0.025 to 0.2% by weight of ascorbic acid is added, the fermented product is freeze dried at -20 to -30deg.C for 24hr. The mixed cereals contain 10 to 15% by weight of glutinous rice, unpolished rice and black rice, 4 to 10% by weight of barley, adlai, sorghum, proso millet and buckwheat, 4 to 6% by weight of white beans, black beans, mung beans and red beans and 10 to 15% by weight of unpolished glutinous rice, or 30 to 40% by weight of glutinous rice, unpolished rice and black rice, 10 to 20% by weight of rice barley, green barley, pressed barley and cut barley, 10 to 30% by weight of green beans, red beans, black beans, Rhynchosia nulubilis Semen, mung beans, white beans, green beans and green beans and 10 to 15% by weight of glutinous millet, proso millet, adlai and corn. |
