A device calculates a forecast about a course of density by surface for a slab of food not yet cut up. Based on this calculation, the device adjusts the number and/or thickness of slices of food in a portion found in a portion of cold meats/cheeses or in the next portion to be cut up so that the actual weight is as close as possible to the target weight. An independent claim is also included for a method for observing a target weight as accurately as possible in a portion of food.
