PROBLEM TO BE SOLVED: To provide a rind-puffing identification device for produce, and a rind-puffing identification method for the produce, capable of measuring stably and accurately a rind-puffing, without differing a measuring condition along with an abutting strength difference and an abutting angle difference to produce, and without generating a measuring error in every measurement, and capable of identifying accurately the rind-puffing by the abutting of a degree of touch to the produce, without destructing each surface of the produce. SOLUTION: This rind-puffing identification device/method for the produce is provided with a sensor member abutting to the measured produce at a prescribed speed, a sensor arranged with sensible axes aligned on an abutting face in the sensor member, and an rind-puffing identification control part for identifying the rind-puffing of each of the produce, by a sensor output obtained with the abutting of the sensor member to the measured produce from a sensible direction of the sensor, and the rind-puffing identification control part converts the sensor output into a graph expressing a relation of time-sensor output, calculates a quantity proportional to a peak value of the sensor output in the graph to serve as a rind-puffing identification data value, and identifies the rind-puffing by the rind-puffing identification data value.
