<p><P>PROBLEM TO BE SOLVED: To provide a method for producing liquor, which does not require a high-temperature condition in saccharification of cereal raw material and obtains a saccharified liquid of cereals having excellent quality stability at a normal temperature. <P>SOLUTION: [1] The method for producing liquor comprises (1) a first process for mixing a steamed cereal raw material with malted cereals and carrying out saccharification in the presence of an alcohol to give a saccharified liquid of cereals and (2) a second process for fermenting the saccharified liquid of cereals with yeast to give fermented unrefined sake. [2] The method for producing liquor comprises (1) a first process for mixing a steamed rice raw material with malted rice and carrying out saccharification in the presence of an alcohol to give a saccharified liquid of rice, (2) a second process for fermenting the saccharified liquid of rice with yeast to give fermented unrefined sake and (3) a third process for distilling the fermented unrefined sake to give distilled liquor. <P>COPYRIGHT: (C)2007,JPO&INPIT</p> |
