The invention relates to a method for producing white pepper seeds, characterised in that a) ripe or substantially ripe pepper berries are washed with water one or more times, b) the washed pepper berries are treated with a preparation that contains pectinase(s), c) the fruit peel and fruit flesh of the pepper berries thus treated is mechanically removed, d) the pepper seeds thus obtained are washed with water one or more times and e) the washed pepper seeds are dried.
