PROBLEM TO BE SOLVED: To provide a method capable of making bread by only rice flour without using wheat flour when making bread by using a general bread-making machine. SOLUTION: In the method for producing bread containing rice flour as a main component by bread-making processes which progress according to procedures of intermittent kneading, general kneading, primary fermentation, degasification, secondary fermentation and baking by using a usual bread-making machine, the method comprises intermittent kneading process performed for 30 sec to 2 min at 32±10°C, general kneading process performed for 15-25 min at 32±10°C, primary fermentation process performed for 3-30 min at 32±10°C to 34±10°C, degasification process performed for 1-10 min at 32±10°C to 34±10°C, secondary fermentation process performed for 30-90 min at 32±10°C to 34±10°C and baking process performed for 10-50 min at 134±10°C to 140±10°C.
