<P>PROBLEM TO BE SOLVED: To provide a coagulating agent of bean curd, capable of producing the high-quality bean curd by utilizing Opuntia, and to provide a method for producing the coagulating agent. <P>SOLUTION: The coagulating agent of the bean curd by utilizing the Opuntia is provided. The method for producing the coagulating agent comprises a step for pulverizing the sorted and cleaned Opuntia, and mixing the pulverized product, an enzymic reaction step comprising a fibrous material-degrading/removing step for adding water to the pulverized Opuntia and further adding a cellulase to react them, and a starch-removing step for successively adding amylase and amyloglucosidase in order, to an extract from which the fibrous material is removed to react them, an ethanol extraction step for carrying out maceration of the enzymically reacted extract at room temperature while regulating the extracting liquid with alcohol, a mucilage-separation step for separating and removing the mucilage by sedimentation after stirring the extract extracted with ethanol, and a concentration step for simultaneously removing the ethanol and concentrating the filtrate by inserting the filtrate from which the mucilage is removed to a concentrator. <P>COPYRIGHT: (C)2007,JPO&INPIT |
