<P>PROBLEM TO BE SOLVED: To provide a processed food of red fish meat for eating raw suppressed with an easy and simple means in discoloration of meat color and deterioration of flavor during long term preservation at a normal freeze temperature zone of about -18 to -25°C, and showing favorable vivid red meat color through each step of a freezing condition, an unopened condition after thawing and a condition of opening a package and actually appreciating the food. <P>SOLUTION: This processed food of red fish meat for eating raw is obtained by hermetically-sealed packaging red fish meat for eating raw through using a packaging material having oxygen transmission rate of 1,000-2,000 cc/m<SP>2</SP>×24 hrs×atm at 23°C in a condition of containing a total amount of 50-300 ppm of ascorbic acid and/or erythorbic acid at weight conversion as ascorbic acid and/or erythorbic acid, and freeze-treating the product. <P>COPYRIGHT: (C)2007,JPO&INPIT |
