<P>PROBLEM TO BE SOLVED: To provide a method for producing bean curd refuse-containing miso comprising imparting flavor, palate feeling and rough feeling at least the same as those of miso produced by using round soybeans popularly placed on the market to bean curd refuse and soybean meal containing a large amount of insoluble vegetable fibers, and converting the bean curd refuse and the soybean meal into aglycon-type isoflavone from glycidic isoflavone hard to be stably absorbed. <P>SOLUTION: The method for producing bean curd refuse-containing miso comprises a pulverization process where the bean curd refuse is pulverized under heated condition wherein the pulverized bean curd refuse obtained in the process is used. In the method, the components of the bean curd refuse are converted from glycidic isoflavone into aglycon-type isoflavone using malt, the matured miso is pulverized again so as to make the pulverized matured miso become minute particles, and the popular round soybeans are used so that the flavor, palate feeling and rough surface feeling similar to those of the miso popularly placed on the market are imparted to the bean curd refuse-containing miso. <P>COPYRIGHT: (C)2007,JPO&INPIT |
