<P>PROBLEM TO BE SOLVED: To provide a method for producing health beer to obtain an orthodox beer having improved preference while preventing the hepatic function disorder induced by the excessive drink of alcoholic beverage by the drug action of Acer nikoense by taking note of the fact that the bitterness of tannin of Acer nikoense can be used as a substitute for the bitterness of hop. <P>SOLUTION: The method for the production of brewed health beverage comprises the malt-crushing step, the charging step, the main fermentation step, the post-fermentation step and the filtration step provided that an extracted component of Acer nikoense is added in the whole steps or a part of the steps. <P>COPYRIGHT: (C)2007,JPO&INPIT |
