PROBLEM TO BE SOLVED: To provide a quality inspection reagent of food for rapidly and simply inspecting the quality of food such as the maturation degree or initial putrefactive degree of food even in a food factory or a food warehouse, a quality inspection method of food and a quality inspection kit of food. SOLUTION: A change in fluorescence intensity is monitored using the quality inspection reagent of food containing peptide, to which a labelling group changed in fluorescence intensity, ultraviolet absorbance or coloration intensity by the reaction of the protease and/or peptide decomposing enzyme contained in food is bonded, a peptide derivative or an amino acid derivative to which the labelling group is bonded.
