PROBLEM TO BE SOLVED: To provide a heat storage device and a method of operating the heat storage device capable of shortening a heat storing time. SOLUTION: The heat storage device 1 can store heat in a heat storage tank 1a and take out heat stored in the heat storage tank 1a by supplying the heat storage tank 1a storing erythritol 3 melted at a melting point of 100°C or higher to store latent heat and coagulated to radiate latent heat, with oil 2 light in specific gravity to erythritol 3, brought into direct contact to exchange heat and separated from erythritol 3 due to specific gravity difference. The heat storage device 1 comprises a thermometer 10 for measuring the temperature of oil 2 supplied to the heat storage tank 1a when storing heat in the heat storage tank 1a and taking out heat stored in the heat storage tank 1a, and a pump 9 stopping the supply of oil 2 when the measured temperature of the oil 2 is outside a predetermined temperature range and controlling the supply quantity of oil 2 so that the oil supply weight per unit weight of erythritol 3 is within a predetermined range when the temperature is within the predetermined temperature range.
