<p><P>PROBLEM TO BE SOLVED: To provide frozen fruit having favorable flavor and palate feeling all year round, causing no color deterioration for a long time, and excellent in shape retention: and to provide a method for producing the frozen fruit. <P>SOLUTION: The frozen fruit is obtained through freezing moist dry fruit where moisture is given to dry fruit, and obtained by the method for producing frozen fruit comprising the following processes (1)-(3) carried out in series: (1) a process of preparing dry fruit; (2) a process of giving moisture to the dry fruit to obtain moist dry fruit; and (3) a process of freezing the moist dry fruit to obtain frozen fruit. <P>COPYRIGHT: (C)2007,JPO&INPIT</p> |
