摘要 <P>PROBLEM TO BE SOLVED: To provide a new protein having a function of reinforcing the acetic acid resistance of acetobacter, a gene for encoding the new protein, also a method for breeding the acetobacter improved in the acetic acid resistance by using the gene encoding the new protein and a method for producing edible vinegar or a high concentration acetic acid in a good efficiency by using the acetobacter. <P>SOLUTION: This method for breeding the acetobacter improved in the acetic acid resistance is characterized by improving the amount of expression of a gene encoding a sensor kinase protein increasing the amount of transcription responding to the acetic acid in a medium, and the sensor kinase protein derived from the acetobacter, a gene of the sensor kinase protein derived from the acetobacter and a method for producing the edible vinegar by using the acetobacter obtained by the breeding method are provided. <P>COPYRIGHT: (C)2006,JPO&NCIPI
