<P>PROBLEM TO BE SOLVED: To provide a gummy-like food excellent in processing suitability in a production process such as avoiding viscosity to become too high and making liquid dripping excellent while attaining disuse of gelatin, excellent in hardness and shape retention at the time of solidifying and giving favorable palate feeling and resistance to the teeth at the time of eating, and to provide a coating product through giving a secondary process such as coating work onto the gummy-like food and bringing the gummy-like food to the center thereof through performing coating work. <P>SOLUTION: This gummy-like food containing no gelatin comprises a gelling agent excluding gelatin, sugar alcohol and/or trehalose and tartaric acid salt, and has a measured value of ≥300 gf at the time of a twist rate of 10% in a hardness test defined by a test method (A). <P>COPYRIGHT: (C)2006,JPO&NCIPI |
