A food, which may be used for animal or human consumption, comprises a coherent gel composed of a cooked substantially uniform mixture comprising blood and/or derivatives thereof, for example blood plasma, blood serum, blood corpuscles, and reconstituted dried blood, and a heatcoagulable gel-forming protein, for example egg white, milk powder, or purified vegetable protein. Optional ingredients indude polysaccharide binders, egg yolk, cereal flour, other fibrous or non-fibrous protein, and meat offal such as lung or liver. Sodium nitrite may be added to prevent discoloration. |
