摘要 FIELD: food-processing industry, in particular, preparing of concentrate used for obtaining of natural cheese simulating product. ^ SUBSTANCE: composition contains fatty and protein components, with hardened vegetable fat being used as fatty component, and collagen and caseinate being used as protein component. The above components are used in the following ratio, wt%: collagen 10-20; caseinate 10-20; hardened vegetable fat the balance. Composition also contains aromatizer in an amount of 6-8 wt% and/or edible salt in an amount of 4-8 wt%. Composition allows natural cheese simulating product to be obtained, which contains easily available low-cost components and has flavor taste and structure of natural milk cheese balanced as to contents of saturated and unsaturated acids, and allows various special cheese tastes to be provided. ^ EFFECT: improved quality, prolonged shelf life and wider range of cheese simulating products. ^ 5 cl, 8 tbl
