<P>PROBLEM TO BE SOLVED: To provide food/drink containing α-lipoic acid by significantly inhibiting α-lipoic acid deterioration through solving such grave drawbacks involved in α-lipoic acid as to emit odor peculiar to sulfur compound or develop turbidity of its solution as a result of its decomposition in a short time on being exposed to light. <P>SOLUTION: The deterioration of α-lipoic acid, especially by light, can be prevented significantly by adding a flavonol glycoside thereto. Therefore, by applying the method for inhibiting deteriorating α-lipoic acid as mentioned above and the α-lipoic acid deterioration inhibitor as mentioned above, the decomposition of α-lipoic acid by artificial light such as natural light or light emitted from incandescent lamps and fluorescent lamps can be prevented, enabling to obtain the food/drink containing α-lipoic acid and promising preventing effects on α-lipoic acid content drop and/or of emitting odor attributable to its decomposition. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
