<p>Equipment consists from the bottom up of a cheese drainer carrier with a whey escape, a mould-extender of bottomless cylindrical moulds matching the drainers for cheese higher than the latter, a withdrawable divider-plate, a curd box with bottom openings matching the moulds and partioned off to limit the speed of the curd when poured in, and a separation grid of vertical blades matching the partitions, which is inserted into the filled box just before the divider plate is pulled out, so that equal amounts of curd fall into all the moulds.</p> |
