Fluid paste of small foodstuff particles are extruded into elementary shape, gel-forming material is applied to its surface and exposed to setting soln. until it forms complete skin around still fluid paste. Techniques can be used for making onion rings and other regular shapes, which are easier to handle than the natural prod. Gel skin prevents separation of breadcrumbs or similar coating from food when fried etc. |
