Extracting lipid components (A) from water-containing animal tissue comprises extraction with an alcohol that forms an azeotrope with water; filtering; washing the residue with absolute alcohol; filtering; combining both extracts and distilling out the aqueous alcohol mixture. An independent claim is also included for (A) prepared by the new process, containing omega -fatty acids (I), an antioxidant (II) and at most 0.5% alcohol.
