<P>PROBLEM TO BE SOLVED: To provide an improving agent for cooked rice having excellent reconstituting properties when the cooked rice preserved by chilling or preserved by freezing is naturally thawed and retaining a good texture of the cooked rice and to provide a method for producing the chilled preserved or frozen cooked rice using the improving agent. <P>SOLUTION: The method for producing the chilled or frozen cooked rice is carried out as follows. The improving agent for the cooked rice containing an organic acid salt and a starch hydrolase is added and the rice is cooked with water added in an amount of 1.6-1.8 times based on the raw rice. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
