PROBLEM TO BE SOLVED: To provide a confectionery material enabling efficiently producing extremely good-quality bun with bean jam filling, stably preservable and stably keeping springiness of dough for a long time even after rubbing with rice powder. SOLUTION: The paste-like confectionery material contains yam, a saccharide, albumen and agar at a weight ratio of 1:(1.8-2.2):(0.005-0.15):0.0005-0.025.
