<P>PROBLEM TO BE SOLVED: To provide a method for stably producing malt of low LOX (lipoxygenase) activity through finding a numerical criterion for determining a proper sprinkling timing. <P>SOLUTION: This method for producing malt to be used in malt alcoholic beverages involves managing the water supply timing at the immersion or germination step of germinated barley with the root length(hereafter, described as 'root length') of the germinated barley as the criterion and conducting a water supply when the root length is short. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
